Domaine William Fèvre | Top Chablis at The Lombok Lodge, home to Flavors Restaurant

Lombok is still one of Indonesia’s quieter islands and hidden gems. Mount Rinjani rises behind us, the Gili Islands sit just across the water, and the sea around Medana Bay gives us reef fish, prawns and lobster. Together with vegetables from our own garden, that is what our kitchen cooks with every day.

Food like this calls for a wine that is fresh, clean and good with seafood. Chablis fits perfectly, and Domaine William Fèvre is one of its finest producers. Here is a little background on the estate, for guests who like to know what is in their glass.

A Family Story Rooted in Chablis

The Fèvre family worked the vineyards of Chablis for generations. The modern chapter began in 1959, when William Fèvre took over the family estate and gave it his name. He was determined to protect the great historic vineyards of Chablis. Parcel by parcel, he acquired exceptional sites and built the domaine into one of the appellation’s most important estates.

Today William Fèvre farms 70 hectares across 90 individual parcels. Among them are 15.9 hectares of Premier Cru and 15.2 hectares of Grand Cru, making it the largest owner of Grand Cru vineyards in Chablis.

A Vineyard Shaped by 150 Million Years

There is a quiet link between your glass and the ocean outside. Chablis grows on Kimmeridgian soil, formed more than 150 million years ago when the region lay beneath a warm, shallow sea.

These soils alternate layers of limestone and marl and are full of tiny fossilised oyster shells. Add a cool climate and the steep slopes around the River Serein, and Chardonnay gains its unmistakable Chablis character: purity, tension, freshness and a saline minerality.
It is one reason Chablis has always been a natural partner for seafood. The wine carries a memory of the sea it grew from.

Letting Each Vineyard Speak

The philosophy at William Fèvre is deliberately restrained. The aim is not to impose a house style but to let each vineyard reveal itself.
• Hand harvesting with careful sorting of the grapes
• Mature oak barrels, rather than strongly flavoured new oak, to keep the wines fresh and transparent
• Biodynamic farming across most of the estate
• The first Chablis estate to earn HVE certification (High Environmental Value), reflecting a long commitment to caring for the land
We recognise something of our own approach in this: start with excellent ingredients, then step back and let them shine.

A New Chapter with DBR Lafite

In January 2024, the domaine was acquired by Domaines Barons de Rothschild Lafite, the family group behind Château Lafite Rothschild. The two share a belief in great terroir, long-term care of the vineyards and wines that express where they come from.
The group is chaired by Saskia de Rothschild, the sixth generation of her family to lead it.
In Chablis, continuity matters. Didier Séguier, a defining figure at the domaine for decades, remains Director. He works alongside François Ménin, Vineyard Manager, and Pascal Reynaud, Cellar Master, keeping the focus on precision and the expression of each site.

From Village to Grand Cru | One Grape, Many Voices

The joy of William Fèvre is tasting Chablis step by step. The grape is always Chardonnay, yet each level shows a different expression of place.

CHABLIS VILLAGE

Purity and Freshness

PETIT CHABLIS, CHABLIS DOMAINE AND CHABLIS CHAMPS ROYAUX
Introduce the classic William Fèvre style
citrus, white flowers, crisp orchard fruit and lively mineral freshness. Bright and energetic, they are lovely as an aperitif at sunset.

PREMIER CRU

More definition and depth
On particularly privileged slopes, the wines gain concentration, texture and individuality while keeping their Chablis tension. The domaine’s Premiers Crus include Fourchaume, Montée de Tonnerre, Vaulorent, Vaillons, Montmains, Mont de Milieu, Les Lys, Beauroy and Vosgros.

The Grand Cru vineyards sit on the famous hillside overlooking the town. William Fèvre owns parcels in Bougros, Bougros Côte Bouguerots, Les Clos, Les Preuses, Valmur and Vaudésir. Here Chardonnay gains length, concentration and ageing potential, always held by the domaine’s freshness.
• Les Clos – power and mineral intensity
• Les Preuses – finesse and elegance
• Bougros – richness and breadth
• Côte Bouguerots — a steep parcel combining concentration with pronounced mineral tension
