Unique and dangerously romantic, Flavors is more than a restaurant; it is an experience unlike any other in Lombok. The soft ocean breeze, the flicker of candlelight, and the symphony of island ingredients come together to create a dining moment that lingers long after the last bite.
At the heart of it all stands Chef I Wayan Jiwa Raga, a passionate Indonesian chef whose culinary journey began in the kitchens of The Oberoi Hotel Group and Mozaic Restaurant Bali. His creations reflect a deep respect for tradition, elevated with a touch of modern artistry — a balance between authenticity and imagination.

Where Taste and Tranquility Meet

Formica Alta – Extra Virgin Olive Oil by ‘Carma’

‘Carma’ is an organic permaculture project founded in 2000 in the valley of Civita di Bagnoregio. Giulio di Gropello and Gianluca Pizzo purchased the first abandoned plot with 600 olive trees. Giovanni Bulgari joined in 2008.
All three share a love for nature. They are also the most passionate consumers of their own products.

The mission of the “3 G’s” – Giulio, Gianluca, and Giovanni – is simple: produce excellence and protect nature. Today, Carma nurtures 7,000 olive trees and 80 hectares of cropland. Their estates in Lazio, Umbria, and Tuscany form the “Olive Oil Triangle” logo.

FORMICA ALTA
Owner: Paolo Bulgari.
Blend: Mainly Frantoio olives, with Moraiolo, Leccino Maurine, and native varieties.
Harvest: By hand, in October or November.
Soil: Clayey, with tuff and sand.
Geology: Sandstone and marl of the Tuscan series.
Yield: 2,200 kg per hectare.
Size: 7 hectares.
Process: Continuous cycle milling.
Style: Medium fruity.
Character: Intense gold colour, notes of artichoke, fresh grass, rosemary, bitter almond, and lettuce. Balanced aroma and taste.

Carma’s oils reflect their philosophy. The estate ranks among Italy’s 100 best oil producers (Atlante degli Oli Italiani), among the world’s top 300 (Flos Olei Guide), and holds the highest score in Gambero Rosso Oli d’Italia. Giovanni’s roots remain in luxury. His father still chairs the family company and serves on the LVMH advisory board. Giovanni worked there for eight years after graduating, mastering jewellery creation and production in Rome.

But the city never felt like home. The countryside called to him. In 2005, he left Rome for Tuscany, settling near a vineyard he had purchased the year before.
